Recipe: Chili Braised Beef | In The Kitchen

Chef Nino from Rouses Marketplaces shares a recipe for sirloin or filet marinated in chili powder and other spices and seared to perfection.

Serves 6-8


  • 1-pound best sirloin or filet, slice into 1-inch cubes
  • 1 tablespoon floor cumin
  • 1 tablespoon chili powder
  • ½ tablespoon granulated garlic
  • ¼ teaspoon kosher salt, or to style
  • ¼ teaspoon cayenne pepper, or to flavor
  • ¼ teaspoon cracked black pepper, or to taste
  • ½ cup soy sauce
  • ½ cup Rouses olive oil
  • 1 tablespoon tomato paste
  • 1 teaspoon light brown sugar
  • 1 lime, juiced


Merge all substances besides cubed steak in a small mixing bowl. Blend absolutely.

Location cubed steak in the marinade and allow marinate for 1 hour, turning the meat from time to time.

ABOUT THE CHEF: Chef Neil “Nino” Thibodaux

Chef Nino was born in Franklin, Louisiana. A stint in the Air Force soon after large college as a F-15 jet mechanic incorporated a month at a remote foundation in close proximity to Cagliari in Sardinia. Immediately after earning a Bachelor of Arts from Trinity University in Jacksonville, Florida, and an Honorary Doctorate from Victory Baptist University in North Augusta, South Carolina, Nino returned to Italy, in which he lived for 13 years. When Nino moved back again to the United States, he settled in Houma, Louisiana, and begun instructing personal cooking lessons. Motivated by his time in Italy, he then released the Close friends of Italy Culinary Institute. Nino has taught month-to-month cooking courses and done cooking demonstrations and activities for Rouses Markets for about 10 years. He has a minimal salt, mild, Cajun seasoning mix referred to as Adrenaline Seasoning, which is accessible at all Rouses Marketplaces in Louisiana, Mississippi and Decrease Alabama.
